INGREDIENTS
Base
• 2 cups almond meal
• ¼ cup coconut oil
• ¼ cup rice malt syrup
• 1 tsp vanilla extract or paste
• Pinch sea salt
Caramel Layer
• ½ cup natural peanut butter
• 2 tbsp coconut oil, melted
• 1 tbsp rice malt syrup
• 1 tsp vanilla extract or paste
• Pinch sea salt
Choc Layer
• 1 cup dark chocolate chips 70%+
• 1 tbsp coconut oil
• Sea salt flakes to finish
Method
1. Line a 20x20cm tin with baking paper.
2. Combine all base ingredients and mix well. Press firmly and evenly into the tin. Freeze for 15 minutes.
3. Mix all caramel ingredients until smooth and creamy. Pour over the set base and spread evenly. Freeze for 20 minutes.
4. Melt chocolate chips and coconut oil together until smooth. Pour over the caramel layer.
5. Sprinkle generously with sea salt flakes. Return to freezer until fully set.
6. Slice into 16 pieces. Store in the fridge or freezer.
Lola Tips
• Run your knife under hot water before slicing for clean cuts every time.
• Swap peanut butter for almond butter for a different flavour.
• These keep well in the freezer for up to 4 weeks — make a batch and thank yourself later.
